Just found this New York Times article talking about raw milk's potential to revitalize the falling dairy market.
Big old shout-out to my home state. It's one of the very few areas in which we're actually progressive. Yeeah, Pennsylvania!
We consume, on average, 2 gallons of raw milk per week here at the Co-op, about 3 pounds of raw cheese, and a pound of raw butter, all courtesy Spring Bank Acres, a local Amish dairy, headed by good old Raymond Fisher. (He calls me, sometimes, to double-check our orders. It's always a particularly delightful part of my day.)
